Preparation of Limoncello

Prepare the Lemons
Wash the lemons thoroughly under running water to remove any wax or pesticides. Pat dry with a clean towel.

Zest the Lemons
Using a vegetable peeler or a microplane, carefully remove the zest from the lemons, making sure to avoid the bitter white pith. Place the zest in a large glass jar.

Add Alcohol
Pour the grain alcohol over the lemon zest in the jar. Seal the jar tightly and let it sit in a cool, dark place for at least 7 days. Shake the jar gently every couple of days to mix the ingredients.
Making the Syrup

Prepare the Sugar Syrup
In a saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar completely dissolves. Allow it to simmer for about 5 minutes, then remove from heat and let cool.

After the lemon zest has infused in the alcohol for 7 days, strain the mixture through a fine mesh sieve or cheesecloth into a clean container, discarding the lemon zest. Add the cooled sugar syrup to the lemon-infused alcohol and stir to combine.
