Pasta Preparation

    Cook the Penne Pasta

    Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside.

Chicken Preparation

    Blacken the Chicken

    Pat the chicken breasts dry with paper towels. Rub the blackening seasoning evenly over both sides of the chicken. Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for about 5-7 minutes per side, or until the chicken is cooked through and has a nice blackened crust. Remove from the skillet and let rest for a few minutes before slicing.

Sauce Preparation

    Make the Cream Sauce

    In the same skillet used for the chicken, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a simmer. Whisk in the grated Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.

Combine and Serve

    Combine Everything

    Add the cooked penne pasta, sweet peas, grape tomatoes, and the sliced blackened chicken to the skillet with the cream sauce. Toss everything together until well combined and heated through. Stir in the fresh basil and parsley just before serving.

    Serve the blackened chicken penne hot, garnished with additional Parmesan cheese if desired.
