Pie Crust

    Prepare the Dough

    In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut the unsalted butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add the ice water, one tablespoon at a time, mixing gently with a fork until the dough comes together. Avoid overmixing.

    Chill the Dough

    Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Roll Out the Dough

    Once chilled, roll out one disc of dough on a floured surface to fit a 9-inch pie pan. Place the rolled dough into the pan and trim any excess.

    Prepare Top Crust

    Roll out the second disc of dough for the top crust. You can either leave it whole or cut it into strips for a lattice design.

    Prepare Apples

    Peel, core, and slice the Granny Smith apples into thin slices.

    Mix Filling Ingredients

    In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch. Toss until apples are well coated.

    Add Vanilla

    Stir in the vanilla extract to the apple mixture.

    Fill the Pie Crust

    Pour the apple filling into the prepared pie crust, spreading it evenly.

Assembly

    Top the Pie

    Place the top crust over the apple filling. If using a whole top crust, cut slits for steam to escape. If using strips, weave them over the filling.

    Brush with Butter

    Melt the unsalted butter and brush it over the top crust. Then sprinkle with milk and granulated sugar.

    Preheat your oven to 425°F (220°C). Bake the pie for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 30-35 minutes, or until the apples are tender and the crust is golden brown.
