    Make the Horseradish Comeback Sauce

    In a small bowl, combine the horseradish and mayonnaise. Mix well and set aside.

    Caramelize the Onions and Mushrooms

    Slice the onion and mushrooms thinly. In a skillet over medium heat, add 1 tablespoon of butter. Once melted, add the onions and cook for about 5 minutes until they start to soften. Add the mushrooms and continue to cook for another 10-15 minutes, stirring occasionally until the onions and mushrooms are caramelized. Season with salt and pepper to taste. Remove from heat.

    Cook the Bacon

    In a separate skillet, cook the applewood-smoked bacon over medium heat until crispy. Remove from the skillet and drain on paper towels.

Assemble and Cook the Patty Melt

    Assemble the Sandwich

    Take two slices of rye bread and spread a layer of the horseradish comeback sauce on one side of each slice. On one slice, layer the caramelized mushrooms and onions, followed by two slices of Gruyère cheese and three slices of cooked bacon. Top with the second slice of bread, sauce side down.

    Grill the Sandwich

    In the same skillet used for bacon, add the remaining tablespoon of butter over medium heat. Once melted, place the assembled sandwich in the skillet. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Press down slightly with a spatula while cooking to ensure even grilling.

    Once both sides are crispy and golden, remove the sandwich from the skillet. Let it cool for a minute before slicing in half. Serve warm with any remaining horseradish comeback sauce on the side.
