Preparation Instructions
Marinate the Chicken
In a bowl, combine the juice of 2 limes, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes.
Cook the Chicken
Grill or pan-sear the marinated chicken breasts over medium heat for 6-7 minutes on each side or until fully cooked. Let cool, then slice into strips.
Prepare the Salad
In a large bowl, combine the shredded cabbage, carrots, green onions, red bell pepper, mandarin oranges, and mixed greens.
Make the Dressing
In a small bowl, whisk together 3 tablespoons of peanut butter, 2 tablespoons of soy sauce, 1 tablespoon of honey, 1 tablespoon of lime juice, and 1 teaspoon of chipotle sauce (adjust to taste).
Combine
Add the sliced chicken to the salad bowl. Drizzle with the spicy peanut-chipotle dressing and toss gently to combine.
Serve
