    Prepare the Short Ribs

    Preheat the oven to 325°F (163°C). Season the short ribs with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat and sear the short ribs on all sides until browned. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add chopped onion, carrots, and celery. Sauté for 5-7 minutes until softened. Add minced garlic and dried porcini mushrooms, and sauté for another 2 minutes.

    Deglaze and Braise

    Pour in the red wine and bring to a simmer, scraping the bottom of the pot. Return the short ribs to the pot, add beef broth, and bring to a gentle simmer. Cover and transfer to the oven. Braise for 3 hours or until the meat is tender.

Polenta

    Cook the Polenta

    In a large pot, bring water to a boil. Gradually whisk in cornmeal, stirring constantly to prevent lumps. Cook for 20-25 minutes on low heat, stirring occasionally until thickened.

    Add Cheese and Season

    Once cooked, remove from heat and stir in butter, taleggio cheese, and salt. Mix until the cheese is melted and the polenta is creamy.

Roasted Autumn Vegetables

    Prepare the Vegetables

    Preheat the oven to 400°F (200°C). Chop butternut squash and red onion into bite-sized pieces. Halve Brussels sprouts. Place all vegetables on a baking sheet.

    Roast the Vegetables

    Drizzle with olive oil, season with salt and black pepper, and toss to coat. Roast for 25-30 minutes until tender and slightly caramelized.

Salsa Verde

    Make the Salsa Verde

    In a food processor, combine green olives, parsley, capers, lemon juice, and olive oil. Pulse until finely chopped but not pureed. Adjust seasoning to taste.
