Salsiccia Preparation

Prepare the Sausage
In a large skillet, heat the olive oil over medium heat. Add the fennel-garlic sausage and cook until browned, breaking it up into smaller pieces with a spoon, about 5-7 minutes.

Add Tomatoes
Once the sausage is browned, add the canned San Marzano tomatoes (including their juices) to the skillet. Stir to combine and break up the tomatoes slightly with a spoon.

Season the Mixture
Add salt and black pepper to the skillet, stirring well to incorporate the seasonings into the sausage and tomato mixture. Allow it to simmer for 10 minutes.

Incorporate the Peppers
After the sauce has simmered, add the pickled long hots and stir to combine. Let the mixture simmer for an additional 5 minutes.

Add Cheese and Basil
Remove the skillet from heat and fold in the sharp provolone cheese and fresh basil leaves, mixing until the cheese is melted and evenly distributed.

Serve the salsiccia mixture warm, garnished with additional basil if desired.
