Preparation of Potatoes

    Prepare the Potatoes

    Wash and peel the Yukon Gold potatoes. Cut them into uniform wedges or thick slices.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with a kitchen towel to remove moisture.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use enough oil to submerge the potatoes.

Frying Potatoes

    Fry the Potatoes

    Carefully add the dried potato wedges to the hot oil in batches, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 5-7 minutes.

    Drain and Season

    Using a slotted spoon, remove the fried potatoes from the oil and let them drain on paper towels. Immediately sprinkle with salt.

Making Garlic Aioli

    Combine Ingredients

    In a medium bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper.

    Whisk the mixture until smooth and well combined. Adjust seasoning to taste.

Serving

    Serve the Papas Fritas

    Place the crispy potatoes on a serving platter. Drizzle with a sprinkle of smoked pimentón and garnish with fresh parsley. Serve with garlic aioli on the side.
