    Cook the Sauce

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until softened, about 5-7 minutes.

    Add Garlic and Pork

    Stir in the minced garlic and cook for an additional minute. Then, add the ground pork to the pot and cook until browned, breaking it up with a spoon.

    Deglaze with Wine

    Pour in the red wine, scraping any brown bits from the bottom of the pot, and let it simmer for about 3 minutes until slightly reduced.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, salt, black pepper, and oregano. Bring the mixture to a simmer, then reduce the heat to low and let it cook for about 30-40 minutes, stirring occasionally.

    Cook the Paccheri

    While the sauce is simmering, bring a large pot of salted water to a boil. Add the paccheri pasta and cook according to package instructions until al dente. Drain and set aside.

    Combine Pasta and Sauce

    Once the sauce is ready, toss the cooked paccheri in with the sauce, ensuring the pasta is well coated.
