Preparation and Cooking

    Marinate the Calamari

    In a large bowl, combine the cleaned calamari, olive oil, salt, and black pepper. Toss well to coat the calamari evenly. Allow it to marinate for about 30 minutes at room temperature.

    Prepare the Oregano-Lemon Dressing

    In a small bowl, whisk together the lemon juice, chopped oregano, and a pinch of salt and pepper. Set aside to let the flavors meld.

    Grill the Calamari

    Preheat your grill to medium-high heat. Once hot, skewer the marinated calamari onto metal or soaked wooden skewers. Grill for about 2-3 minutes on each side, or until the calamari is opaque and slightly charred.

    On a large serving platter, arrange the grilled calamari, oil-cured olives, gigante beans, and charred bell peppers. Drizzle with the oregano-lemon dressing and spoon the almond-hazelnut romesco sauce over the top.
