    Prepare the Ingredients

    Start by preparing all the ingredients. Trim the beef tenderloin of any excess fat and cut it into 1-inch cubes. Clean the king oyster mushrooms and slice them into thick pieces.

    Marinate the Beef

    In a bowl, mix the olive oil, salt, and black pepper. Add the beef cubes to the bowl and toss to coat evenly. Let it marinate for at least 30 minutes.

    Prepare the Fingerling Potatoes

    Boil the fingerling potatoes in salted water until fork-tender, about 15-20 minutes. Once cooked, drain and lightly smash each potato with the back of a spoon.

    Assemble the Skewers

    Soak the wooden skewers in water for at least 15 minutes to prevent burning. Thread the marinated beef, slices of king oyster mushrooms, and pieces of pickled eggplant onto the skewers, alternating between each ingredient.

    Preheat a grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 3-4 minutes on each side or until the beef is cooked to your desired doneness.

    Serve with Chimichurri

    Remove the skewers from the grill and drizzle with the 25-year-aged balsamic vinegar. Serve immediately with a side of smashed fingerling potatoes and chimichurri sauce.
