Method

Cooking the Pasta

  1. 1

    Boil the Water

In a large pot, bring 4-5 liters of salted water to a boil.

  2. 2

    Cook the Spaghetti

Add the spaghetti to the boiling water and cook according to package instructions until al dente (usually about 8-10 minutes).

  3. 3

    Reserve Pasta Water

Before draining, reserve about 1 cup of pasta water, then drain the spaghetti in a colander.

Preparing the Sauce

  1. 4

    Whisk the Eggs

In a mixing bowl, whisk together 4 large eggs, 100g of grated Parmesan cheese, and 1 tsp of black pepper until smooth.

  2. 5

    Add Salt

Season the mixture with salt to taste, keeping in mind that the cheese will also add saltiness.

Cooking the Pancetta

  1. 6

    Cook the Pancetta

In a large skillet over medium heat, add 150g of diced pancetta or guanciale and cook until crispy, about 4-5 minutes.

  2. 7

    Combine with Pasta

Once crispy, add the drained spaghetti to the skillet with the pancetta and toss to combine.

Combining Everything

  1. 8

    Mix in the Egg Mixture

Remove the skillet from heat and quickly pour in the egg and cheese mixture, tossing the pasta continuously to create a creamy sauce. If necessary, add reserved pasta water a little at a time to achieve desired creaminess.

  2. 9

    Serve

Serve immediately, garnished with additional Parmesan cheese and freshly chopped parsley, if desired.
