Method
Cooking the Pasta

Boil the Water
In a large pot, bring 4-5 liters of salted water to a boil.

Cook the Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente (usually about 8-10 minutes).

Reserve Pasta Water
Before draining, reserve about 1 cup of pasta water, then drain the spaghetti in a colander.
Preparing the Sauce

Whisk the Eggs
In a mixing bowl, whisk together 4 large eggs, 100g of grated Parmesan cheese, and 1 tsp of black pepper until smooth.

Add Salt
Season the mixture with salt to taste, keeping in mind that the cheese will also add saltiness.
Cooking the Pancetta

Cook the Pancetta
In a large skillet over medium heat, add 150g of diced pancetta or guanciale and cook until crispy, about 4-5 minutes.

Combine with Pasta
Once crispy, add the drained spaghetti to the skillet with the pancetta and toss to combine.
Combining Everything

Serve
Serve immediately, garnished with additional Parmesan cheese and freshly chopped parsley, if desired.
