    Make the Dough

    In a large bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt. Mix well.

    Add Butter

    Cut in the unsalted butter until the mixture resembles coarse crumbs.

    Incorporate Egg and Liquids

    Stir in the egg yolk, white wine (or vinegar), and water. Mix until a dough forms. Knead the dough on a floured surface until smooth.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

    Roll Out and Cut

    On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles (about 4 inches in diameter) using a cookie cutter.

    Shape the Shells

    Wrap each circle around a cannoli tube, sealing the edges with a bit of water.

    Fry the Shells

    Heat oil in a deep fryer or heavy pot to 375°F (190°C). Carefully fry the wrapped tubes until golden brown, about 2-3 minutes. Remove and let cool slightly before removing the tubes.

    Prepare the Filling

    In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Add Chocolate Chips

    Fold in the chocolate chips until evenly distributed.

    Fill the Cannoli

    Using a pastry bag or a small spoon, fill each cooled cannoli shell with the ricotta filling.

    Garnish

    Sprinkle the ends with chopped pistachios or candied fruit for garnish.
