Method
Preparing the Chicken
- 1
Season the Chicken
Season both sides of the chicken breasts with salt and black pepper.
- 2
Setup Breading Station
Prepare a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese.
Breading the Chicken
- 3
Bread the Chicken
Dredge each chicken breast in flour, shaking off excess. Dip in beaten eggs, then coat with the breadcrumb and Parmesan mixture, pressing gently to adhere.
Cooking the Chicken
- 4
Heat the Oil
In a large skillet, heat olive oil over medium heat until hot.
- 5
Cook the Chicken
Add breaded chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and place on a paper towel-lined plate to drain excess oil.
Assembling the Dish
- 6
Top with Marinara and Cheese
Preheat the oven to 400°F (200°C). Place the cooked chicken breasts in a baking dish. Spoon marinara sauce over each chicken breast, then top with shredded mozzarella cheese.
- 7
Bake
Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
- 8
Garnish and Serve
Remove from the oven, garnish with chopped fresh basil if desired, and serve hot.
