Preparation Steps
Prepare the Yuca
Peel the yuca and cut it into thick sticks (about 1 inch wide). Rinse under cold water.
Boil the Yuca
In a large pot, bring salted water to a boil. Add the yuca sticks and cook for about 15-20 minutes until tender but not falling apart. Drain and let cool.
Fry the Yuca
Heat vegetable oil in a deep pan over medium-high heat. Once hot, add the yuca sticks in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
Prepare the Garnishes
While the yuca is frying, prepare the garnishes. Thinly slice the radishes and chop the cilantro.
Assemble the Dish
Serve the crispy yuca on a platter with guacamole, pickled onions, sliced radishes, and chopped cilantro on the side.
