Prepare the Marinade
In a bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, and minced ginger. Mix well until the sugar is dissolved.
Marinate the Tuna
Cut the sushi-grade tuna into thin slices or cubes. Add the tuna to the marinade and let it sit for at least 30 minutes in the refrigerator.
Cook the Rice
Rinse the rice under cold water until the water runs clear. In a pot, combine the rinsed rice and water, then bring to a boil. Once boiling, reduce heat to low, cover, and simmer for about 18-20 minutes or until the water is absorbed. Remove from heat and let it sit covered for another 10 minutes.
Cook the Tuna
In a separate skillet over medium-high heat, add the marinated tuna and cook for about 2-3 minutes until just cooked through, stirring frequently.
Assemble the Dish
On a plate, serve a scoop of rice, top with the cooked tuna, sautéed bok choy, and a generous serving of kimchi. Garnish with sesame seeds and sliced green onions.
