Preparation and Assembly
Prepare Puff Pastry
Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets on a floured surface to about 1/8 inch thick. Cut into squares or circles, depending on your preferred shape.
Make the Filling
In a mixing bowl, combine the softened goat cheese and diced guava paste until well blended.
Assemble the Pastelitos
Place a tablespoon of the goat cheese and guava mixture in the center of each pastry shape. Fold the pastry over to create a pocket, sealing the edges with a fork or by crimping them with your fingers.
Bake
Place the assembled pastelitos on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until golden brown.
Prepare Whipped Cream
While the pastelitos are baking, whip the cream until soft peaks form. You can add a little sugar or vanilla extract for sweetness, if desired.
Serve
Once the pastelitos are done baking, remove them from the oven and let them cool slightly. Serve warm, topped with whipped cream, diced seasonal fruits, and sprinkles.
