Cooking Instructions

1

Prepare the Marinade

In a blender, combine pasilla peppers (seeds removed), garlic, olive oil, salt, and pepper. Blend until smooth.

2

Marinate the Steak

Place the hanger steak in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 1 hour, preferably overnight.

3

Prepare the Cauliflower Puree

Steam the cauliflower until tender, about 10-12 minutes. In a blender, combine cooked cauliflower and butter. Blend until smooth and creamy, adding salt to taste.

4

Cook the Asparagus

In a skillet, heat a bit of olive oil over medium heat. Add asparagus and sauté for about 5-6 minutes, until tender but still crisp. Season with salt and pepper.

5

Cook the Steak

Preheat a grill or skillet over high heat. Remove the steak from the marinade and grill for 4-5 minutes on each side for medium-rare, or to your desired doneness. Let it rest for 5 minutes before slicing.

6

Plate the Dish

On a plate, spread a layer of cauliflower puree, place the sliced steak on top, and arrange the sautéed asparagus alongside. Drizzle with any remaining marinade if desired.
