Duck Chilaquiles Ingredients

Method

Preparation Directions

1

Prepare the Duck

Heat the duck confit in a pan over medium heat until warmed through and crispy.

2

Make the Salsa

In a blender, combine salsa guajillo ingredients and blend until smooth. Adjust seasoning with salt and pepper.

3

Prepare the Tortilla Chips

In a large skillet, add the totopos and pour the salsa guajillo over them. Stir gently to coat the chips without breaking them.

4

Cook the Onion

Slice the onion and sauté it in a separate pan with a little oil until translucent.

5

Fry the Eggs

In another pan, fry the eggs sunny-side up to your desired doneness.

6

Assemble the Dish

On a plate, layer the sauced totopos, duck confit, sautéed onions, and fried eggs. Drizzle with crema.

7

Garnish

Top with avocado slices, crumbled cotija cheese, sliced radishes, and freshly chopped cilantro.
