Method

Prepare the Rice

  1. 1

    Cook the Rice

In a medium saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let simmer for about 18-20 minutes or until the water is absorbed and the rice is tender.

Prepare the Vegetables

  1. 2

    Chop the Vegetables

Wash and chop the bell peppers, broccoli, carrots, snap peas, and zucchini into bite-sized pieces and set aside.

Make the Sauce

  1. 3

    Combine Sauce Ingredients

In a small bowl, mix together the soy sauce, sesame oil, minced garlic, minced ginger, cornstarch, and water until well combined. This will be your stir fry sauce.

Stir Fry the Vegetables

  1. 4

    Heat the Pan

In a large wok or skillet, heat a tablespoon of oil over medium-high heat. Add the chopped vegetables and stir fry for about 5-7 minutes until they are tender-crisp.

  2. 5

    Add the Sauce

Pour the prepared stir fry sauce over the vegetables and stir well to combine. Cook for an additional 2-3 minutes until the sauce thickens slightly and coats the vegetables.

Serve the Dish

  1. 6

    Plate and Garnish

Serve the vegetable stir fry over a bed of cooked rice. Sprinkle with sesame seeds and chopped green onions for garnish. Enjoy your meal!
