Steak Preparation

Season the Steak
Generously season both sides of the ribeye steaks with salt and black pepper.

Rest the Steak
Remove the steaks from the grill and allow them to rest for at least 5 minutes before slicing.
Fries Preparation

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips to resemble fries.

Soak the Potatoes
Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain and pat dry the potato strips. Carefully add them to the hot oil in batches, frying until golden and crispy, about 5-7 minutes.

Season the Fries
Remove fries from the oil and drain on paper towels. Immediately sprinkle with salt to taste.
Peppercorn Sauce Preparation

Melt the Butter
In a small saucepan over medium heat, melt the butter.

Add Peppercorns
Add the green peppercorns and sauté for about 1 minute.

Pour in Beef Broth
Pour in the beef broth and bring to a simmer, allowing it to reduce by half.

Add Cream
Stir in the heavy cream and continue to cook until the sauce thickens, about 3-5 minutes.

Season the Sauce
Season the sauce with salt and black pepper to taste, then remove from heat.
