Prepare the Starter

    Mix the Ingredients

    In a medium bowl, combine the sourdough starter, 100g of all-purpose flour, and 100ml of water. Mix until smooth.

    Ferment the Starter

    Cover the bowl with a cloth and let it sit at room temperature for 8-12 hours until it becomes bubbly and doubles in size.

Make the Dough

    Combine Ingredients

    In a large mixing bowl, combine the fermented starter, 400g of all-purpose flour, 350ml of water, and 10g of salt. Mix until a shaggy dough forms.

    Knead the Dough

    Transfer the dough onto a lightly floured surface and knead for about 10-15 minutes until smooth and elastic.

    Bulk Fermentation

    Place the kneaded dough in a clean bowl, cover it with a damp cloth, and let it rise at room temperature for 4-6 hours, or until it has doubled in size.

Shape and Bake

    Preheat the Oven

    Preheat your oven to 230°C (450°F) and place a Dutch oven inside to heat.

    Shape the Dough

    Once the dough has risen, gently deflate it and shape it into a round loaf. Let it rest for 30 minutes.

    Carefully remove the hot Dutch oven, place the dough inside, score the top with a sharp knife, and cover with the lid. Bake for 30 minutes covered, then remove the lid and bake for an additional 15-20 minutes until golden brown.

    Remove the bread from the Dutch oven and let it cool on a wire rack for at least 1 hour before slicing.
