Squid Preparation

Prepare the Squid
Rinse the cleaned squid rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, and freshly ground black pepper.

Coat the Squid
Dredge the squid rings in the flour mixture, ensuring they are well-coated. Shake off any excess flour.
Frying the Squid

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Squid
Carefully add the coated squid rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Squid
Using a slotted spoon, remove the fried squid from the oil and place them on a plate lined with paper towels to drain excess oil.
Lemon Mayo Preparation

In a small bowl, combine mayonnaise, freshly squeezed lemon juice, and lemon zest.

Add salt and freshly ground black pepper to taste. Mix until well combined.
