Method

Grilling the Salmon

    Prepare the Salmon

    Pat the salmon fillets dry with a paper towel. Brush both sides with olive oil and season with salt and black pepper.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F or 190°C).

    Grill the Salmon

    Place the salmon fillets skin-side down on the grill. Cook for 5-7 minutes, then flip and cook for an additional 3-5 minutes until the internal temperature reaches 145°F (63°C). Remove from the grill and let rest.

Cooking the Vegetables

    Prepare the Vegetables

    Wash and trim the asparagus, peel and slice the carrots, and chop the bell peppers into bite-sized pieces.

    Cook the Vegetables

    In a pot of boiling salted water, blanch the asparagus and carrots for 3-4 minutes until bright and tender-crisp. Add the bell peppers, and cook for an additional 1-2 minutes. Drain and toss with a little olive oil, salt, and pepper.

Making the Hollandaise Sauce

    Melt the Butter

    In a small saucepan, melt the butter over low heat. Remove from heat and let it cool slightly.

    Whisk the Egg Yolks

    In a bowl, whisk together the egg yolks and lemon juice until pale and thick.

    Combine Everything

    Slowly drizzle in the melted butter into the egg yolk mixture while whisking continuously until the sauce thickens. Season with a pinch of salt and cayenne pepper.
