Prepare the Marinade
In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Mix well.

Marinate the Chicken
Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Seasonal Vegetables

Prepare the Vegetables
In a large bowl, combine the sliced zucchini, chopped bell peppers, and cherry tomatoes. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss until the vegetables are evenly coated.

Grilling the Chicken

Preheat the Grill
Preheat your grill to medium-high heat.
- 6
Grill the Chicken
Remove the chicken from the marinade and discard the marinade. Grill the chicken breasts for about 6-7 minutes per side, or until they are cooked through and have nice grill marks. The internal temperature should reach 165°F (75°C).
