Chocolate Mousse

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. In a saucepan, melt the unsalted butter over low heat. Once melted, add the chopped chocolate to the saucepan and stir until fully melted and smooth. Remove from heat and let it cool slightly.

Prepare the Egg Mixture
In a separate bowl, whisk the eggs and granulated sugar together until the mixture is pale and thick. This should take about 5 minutes. Add the vanilla extract and a pinch of salt, mixing well.

Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture until well combined. Be careful not to deflate the mixture.

Chill the Mousse
Pour the mousse mixture into serving dishes or glasses and refrigerate for at least 2 hours or until set.
Whipped Cream Topping

Whip the Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream until soft peaks form.

Top the Mousse
Once the mousse has set, remove it from the refrigerator and top each serving with a generous dollop of whipped cream.
