Method
Preparing the Cake
- 1
Preheat the Oven
Preheat your oven to 200°C (390°F).
- 2
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
- 3
Whisk Eggs and Sugar
In a separate bowl, whisk together the granulated sugar and large eggs until pale and frothy, about 2-3 minutes.
- 4
Combine Mixtures
Gradually fold the melted chocolate mixture into the egg mixture until fully incorporated.
- 5
Add Flour and Vanilla
Sift in the all-purpose flour and add the vanilla extract and salt. Fold gently until just combined.
- 6
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- 8
Bake
Bake in the preheated oven for 10-12 minutes, until the edges are firm but the center is still soft.
- 9
Rest and Serve
Remove from the oven and let them rest for 1-2 minutes. Invert onto plates and serve immediately with a scoop of vanilla ice cream and fresh berries, if desired.
