Prepare the Halloumi
Slice the Halloumi cheese into bite-sized pieces, about 1 cm thick. Heat the olive oil in a non-stick skillet over medium heat. Add the Halloumi slices and cook until golden brown on both sides, approximately 2-3 minutes per side. Remove from heat and set aside.

Make the Cilantro-Mint Chutney
In a food processor, combine fresh cilantro, mint leaves, lemon juice, salt, and pepper. Blend until smooth, adding a little water if necessary to achieve desired consistency. Set aside.

Prepare the Guajillo Labneh
In a bowl, mix Greek yogurt with guajillo chili powder, lemon juice, salt, and pepper. Stir until well combined and smooth.

Serve
On a serving platter, arrange the Halloumi bites. Serve with cilantro-mint chutney and guajillo labneh on the side for dipping.
