Method

Preparation of Carne Asada

    Marinate the Steak

    In a bowl, combine olive oil, minced garlic, lime juice, cumin, salt, and black pepper. Add the flank steak and marinate for at least 1 hour, preferably overnight.

    Preheat the grill to high heat. Remove the steak from the marinade and grill for about 6-8 minutes per side for medium-rare, or until desired doneness. Let it rest for 10 minutes before slicing.

Preparation of Potato Purée

    In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain well.

    Mash the potatoes, then mix in butter and sour cream until smooth. Season with salt and black pepper to taste.

Preparation of Spinach

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute. Add the spinach and cook until wilted. Season with salt to taste.

    In a saucepan, combine dried ancho chiles, sugar, apple cider vinegar, and water. Simmer over low heat for about 30 minutes until the chiles are soft. Blend until smooth.

Preparation of Red Wine Jus

    In a saucepan, combine red wine, beef broth, and minced shallots. Simmer until reduced by half. Stir in butter and season with salt and black pepper to taste.
