    Prepare the Chimichurri Marinade

    In a bowl, combine olive oil, parsley, garlic, red wine vinegar, oregano, crushed red pepper flakes, and salt. Mix well and let it sit for at least 15 minutes to allow the flavors to meld.

    Marinate the Shrimp

    Place the shrimp in a large bowl or zip-top bag, and pour half of the chimichurri marinade over them. Toss to coat and let marinate for 30 minutes.

    Prepare the Pepita Salsa Verde

    In a blender or food processor, combine the pepitas, cilantro, lime juice, and water. Blend until smooth. Adjust seasoning with salt if necessary.

    Cook the Grits

    In a saucepan, bring 4 cups of water to a boil. Add the stone ground grits and a pinch of salt, reduce heat to low, and cook until thickened, about 20-25 minutes, stirring occasionally.

    Grill the Shrimp

    Preheat a grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers and grill for 2-3 minutes on each side or until they are opaque and cooked through.

    Serve

    Spoon the cooked grits onto plates, top with sofrito, and arrange the grilled shrimp on top. Drizzle with pepita salsa verde before serving.
