Prepare the Lamb

Preheat the oven to 180°C (350°F). Rub the lamb loin with olive oil, salt, black pepper, cumin, coriander, paprika, turmeric, cinnamon, and ginger. Let it marinate for at least 30 minutes.

Sear the Lamb

Heat a large oven-safe skillet over medium-high heat. Add the marinated lamb loin and sear on all sides until browned, about 3-4 minutes per side.

Braised Eggplant

Remove the lamb from the skillet and set aside. Add chopped onions and minced garlic to the skillet and sauté until translucent. Add diced eggplant and cook until softened, about 5 minutes.

Bake the Lamb

Place the seared lamb back in the skillet on top of the eggplant. Cover with foil and transfer to the preheated oven. Bake for 1 hour, or until the lamb reaches your desired doneness.

Make the Chutney

In a food processor, combine cilantro, mint leaves, and a pinch of salt. Blend until finely chopped. Add a splash of olive oil to achieve your desired consistency.

Prepare the Carrot-Coconut Sauce

In a saucepan, combine chopped carrots and coconut milk. Cook until the carrots are tender, about 15 minutes. Blend until smooth and season with salt.

Serve

Once the lamb is done, let it rest for 10 minutes. Slice the lamb and serve it on a bed of bitter greens, topped with the braised eggplant, carrot-coconut sauce, and cilantro-mint chutney.
