    Prepare the Pork

    Season the pork shoulder with salt and black pepper. In a smoker, cook the pork shoulder at 225°F for 6-8 hours until tender. Shred the pork once cooked.

    In a saucepan, heat olive oil over medium heat. Add cooked charro beans and simmer for 10 minutes. Adjust seasoning with salt and lime juice.

    Pickle the Jamaica Onions

    Soak dried hibiscus flowers in boiling water for 10 minutes, then drain. Mix with sliced onions, lime juice, and a pinch of salt. Let sit for at least 30 minutes.

    Assemble the Tacos

    Warm taco shells, fill with shredded pork, top with charro beans, pickled onions, Oaxaca cheese, and chapulines. Garnish with fresh cilantro.
