Prepare glass
Chill a coupe or Nick & Nora glass by filling it with ice water while you build the cocktail. Alternatively, fill a rocks glass with fresh ice if you prefer served on the rocks.
Measure and add ingredients
Into a cocktail shaker add 2 oz blanco tequila, 0.75 oz hibiscus syrup, 0.75 oz fresh lemon juice, 1 oz pineapple juice, and 2 dashes of aromatic bitters.
Add ice and shake
Add approximately 1 cup of ice to the shaker (enough to chill quickly). Cap and shake vigorously for 12–15 seconds, until the shaker is very cold and you feel condensation forming.
Prepare serving glass
Discard the ice water from your chilled serving glass and, if using a rocks glass, fill it with 1/2 cup fresh ice.
Double strain and pour
Double-strain the cocktail into the chilled coupe (for a clear, silky drink) or over the fresh ice in a rocks glass. Use a fine mesh strainer over the standard cocktail strainer to remove small ice shards and any hibiscus solids.
Serve
Serve immediately while cold. Enjoy responsibly.
