Wash and prepare apples
Rinse the apples thoroughly under cool running water to remove wax and debris. Pat dry. Core each apple and cut into quarters. If using a high-power blender, you may leave the skins on for nutrients and color; if you prefer a milder flavor, peel the apples before cutting.
Blend apples
Place the apple pieces in a blender. Add 1/2 cup cold water to help the blending process. Blend on high for 45–60 seconds, or until the mixture is very smooth and no large chunks remain. If your blender is small, work in two batches to avoid overfilling.
Strain for clear juice (optional)
For a clear, smooth juice: set a fine-mesh sieve lined with cheesecloth (or a nut-milk bag) over a large bowl or pitcher. Pour the blended apple purée into the sieve and let the juice drain naturally, pressing gently with the back of a spoon or a rubber spatula to extract as much liquid as possible. For an ultra-clear result, strain a second time through a fresh layer of cheesecloth.
Keep it pulpy (alternative)
If you prefer a pulpy, fuller-bodied apple juice, skip the fine straining. Instead, pour the blended mixture through a coarser sieve or simply serve as-is, stirring once to distribute solids evenly.
Finish and balance
Transfer the strained juice to a pitcher. Stir in 1 tablespoon of fresh lemon juice, 1 teaspoon sugar or simple syrup, and a pinch of salt. Taste and adjust: add up to 1 tablespoon more lemon if it needs brightness, or another teaspoon of sugar/simple syrup if it needs sweetness. The pinch of salt enhances flavor—omit if preferred.
Chill and serve
Refrigerate the juice for at least 30 minutes to chill and let flavors meld, or serve immediately over ice. If serving chilled, pour over ice cubes in glasses and serve within 24–48 hours for best freshness. Stir before serving if the juice has separated.
Storage
Store leftover apple juice in an airtight container or sealed pitcher in the refrigerator for up to 48 hours. For longer storage, freeze in airtight containers or ice-cube trays for up to 3 months (thaw in the refrigerator before serving).
