Make syrup
Combine 0.5 cup simple syrup, 2 tbsp passion fruit purée and 0.25 tsp vanilla extract in a small bowl or jar. Stir or whisk until fully incorporated. Store refrigerated in a sealed container for up to 2 weeks.
Cocktail Assembly
Chill glass
Place a martini or coupe glass in the freezer for a few minutes or fill with ice water while you prepare the cocktail to chill the glass.
Combine ingredients
In a cocktail shaker, add 1 cup of ice, 2 oz vodka, 1 oz passion fruit juice, 0.5 oz pineapple juice, 0.5 oz house special syrup, and 0.25 oz fresh lime juice.
Shake
Secure the shaker lid and shake vigorously for about 12–15 seconds, until the shaker is well chilled and slightly frosted on the outside.
Strain
Discard the ice or water from the chilled glass. Double-strain the shaken mixture into the chilled martini or coupe glass using a fine mesh strainer over a Hawthorne or julep strainer to remove ice shards and pulp.
Top with Prosecco
Carefully top the cocktail with 1.5 oz cold Prosecco. Pour gently to preserve some effervescence.
Garnish & finish
Spoon 1 tsp passion fruit pulp into the center of the cocktail and add a lime wheel or twist on the rim if desired. Serve immediately.
