Prepare chicken

Trim and pound

Trim any excess fat from the chicken breasts. For even cooking, place each breast between two pieces of plastic wrap and gently pound with a meat mallet or heavy pan until uniformly about 1/2 inch (1.2 cm) thick.

Season baseline

Pat the chicken dry with paper towels. Sprinkle both sides with 3/4 teaspoon kosher salt, 1/4 teaspoon black pepper, and a light dusting (about 1/4 tsp) of garlic powder. This initial seasoning helps build flavor before choosing grilled or breaded method.

Marinade for both methods

Combine 3 tablespoons olive oil, 2 tablespoons lemon juice, 1 teaspoon smoked paprika, 3/4 teaspoon garlic powder, remaining 3/4 teaspoon kosher salt, and remaining 3/4 teaspoon black pepper in a shallow dish. Add the chicken and turn to coat. For best results, cover and refrigerate 20–30 minutes. If short on time, proceed immediately; the surface seasoning will still help.

Preheat and oil grill

Preheat a gas or charcoal grill to medium-high (about 400°F / 200°C). Oil the grill grates or brush a little olive oil on the chicken to prevent sticking.

Grill

Place the marinated breasts on the hot grill. Cook without moving for 4–6 minutes until grill marks form and the edges start to turn opaque. Flip and cook 4–6 more minutes, checking for an internal temperature of 165°F (74°C) at the thickest part. Exact time will vary with thickness; use a thermometer for accuracy.

Finish and rest

If desired, brush each breast with 1/4 tablespoon butter immediately after removing from the grill. Transfer to a plate, tent loosely with foil, and rest 5 minutes to allow juices to redistribute.

Slice or serve whole, garnish with chopped parsley and lemon wedges. Serve hot.

Breaded (Pan-Fried) Chicken Directions

Set up dredging station

Place 1 cup flour in a shallow dish and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. In a second shallow bowl, whisk 2 eggs with 1 tablespoon water. In a third shallow bowl, combine 1 cup breadcrumbs with 1/4 cup grated Parmesan and 1/2 teaspoon smoked paprika.

Buttermilk soak (optional)

For a tender interior, pour 1 cup buttermilk into a dish and submerge the marinated chicken for 15–30 minutes in the refrigerator before dredging. If using the buttermilk soak, pat the breasts lightly dry before dredging to help coating adhere.

Dredge

One piece at a time: dredge the chicken in the seasoned flour, shaking off excess; dip into the egg wash, letting excess drip; press firmly into the breadcrumb mixture to coat both sides. Place coated breasts on a wire rack while heating the oil.

Heat oil

Pour 1/2 cup neutral oil into a large skillet (preferably cast iron) and heat over medium-high until shimmering and a pinch of breadcrumb sizzles immediately (about 350°F / 175°C). Use enough oil for shallow frying — about 1/8 to 1/4-inch depth.

Pan-fry

Carefully place breaded breasts in the hot oil, do not overcrowd. Fry 4–6 minutes per side, adjusting heat as needed to avoid burning, until crust is golden brown and internal temperature reaches 165°F (74°C). If breasts are thicker, lower heat slightly and cover for a minute or two to ensure cooked through without over-browning.

Drain and rest

Transfer cooked chicken to a wire rack or paper towel-lined plate to drain excess oil. Let rest 3–5 minutes before serving.
