Birria Filling

Warm and season meat

In a medium saucepan over low heat, combine the shredded birria and 1 cup consomé. Warm gently until the liquid is simmering very lightly (about 4–6 minutes). Stir in 1 tablespoon lime juice, 1 teaspoon vegetable oil, 1 teaspoon salt, and 1 teaspoon black pepper. Cook 2–3 more minutes until flavors meld and the mixture is saucy but not soupy. Keep warm.

Strain for assembly (optional)

If the birria has large chunks of fat or connective tissue, quickly remove them with tongs or a slotted spoon so the filling is easy to roll.

Prepare wrappers

If using flour tortillas, warm them briefly (10–15 seconds) in a dry skillet or microwave to make them pliable. If using spring roll wrappers, keep them covered with a damp towel and handle one at a time to prevent drying and tearing.

Assemble rolls

Lay one wrapper flat. Place about 1/4 cup warm birria filling in a line down the center, then top with 2 tablespoons shredded cheese. Fold the bottom edge up over the filling, fold in both sides, and roll tightly to enclose (like a burrito). Repeat to make 8 rolls. Place assembled rolls seam-side down on a tray.

Heat oil

Pour about 1 cup vegetable oil into a heavy skillet to reach ~1/4 inch depth and heat over medium-high until shimmering and 350°F (if using a thermometer). If you don't have a thermometer, test with a small piece of tortilla — it should sizzle immediately and brown in about 30–45 seconds.

Fry until crisp

Working in batches, carefully place 2–3 rolls seam-side down into the hot oil. Fry 2–3 minutes per side, turning once with tongs, until evenly golden-brown and crisp. The cheese should melt inside. Transfer to a paper towel–lined tray to drain. Keep warm in a low oven (200°F/93°C) if needed.

Pickled Red Onions & Garnish

Prepare quick pickled onions (make ahead optional)

If you don't have pickled onions ready: thinly slice 1/2 small red onion and place in a jar. Heat 1/2 cup white vinegar, 1/2 cup water, 1 tablespoon sugar, and 1 teaspoon salt until sugar dissolves. Pour over onions, cool to room temperature, then refrigerate at least 30 minutes. For this recipe use 3 oz pickled onions drained. If you already have pickled onions, simply drain them.

Prepare garnish

Thinly slice radishes and pick a handful of cilantro leaves. Keep them fresh and chilled until serving.

Consomé Dipping Sauce & Serving

Warm and strain consomé

Warm the remaining 2 cups of consomé in a small saucepan until gently simmering. Taste and adjust seasoning with a pinch of salt if needed. Strain to remove solids so the dipping liquid is clear and smooth.

Serve

Plate two birria spring rolls per order. Place a small ramekin or bowl with warmed consomé for dipping. Top rolls with a small handful of pickled onions, a few slices of radish, and scatter cilantro leaves. Offer lime wedges and optional chopped onion on the side. To eat: dip each roll in consomé, then bite and enjoy the melted cheese, birria, and pickled garnish.
