Brewing
Mash the Grains
In a large brew kettle, heat 3 gallons of filtered water to 160°F (71°C). Add the pale malt, wheat malt, and caramel malt. Maintain the temperature for 60 minutes.
Sparge
After mashing, sparge the grains with an additional 2 gallons of water heated to 170°F (77°C) to extract sugars.
Boil the Wort
Bring the wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes.
Cool the Wort
After boiling, cool the wort quickly using a wort chiller or an ice bath.
Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Pitch the wheat beer yeast and seal with an airlock. Allow the beer to ferment for 1-2 weeks at 68°F (20°C).
Bottling
Once fermentation is complete, transfer the beer to a bottling bucket, adding priming sugar if desired. Bottle the beer and cap it. Allow to carbonate for 1-2 weeks.
