    Prepare the Beans

    Rinse and soak the dried pinto beans in water overnight or for at least 6-8 hours. Drain and set aside.

    Cook the Bacon

    In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove bacon and crumble it once cooled, leaving the bacon grease in the pot.

    Sauté Vegetables

    Add diced onion and green bell pepper to the pot with bacon grease. Sauté until soft, about 5 minutes. Add minced garlic and cook for an additional minute.

    Combine Ingredients

    Add the soaked beans, diced tomatoes, BBQ sauce, brown sugar, ground black pepper, and crumbled bacon to the pot. Stir to combine.

    Add Water

    Pour in the water, ensure all ingredients are covered, and bring to a boil.

    Simmer

    Reduce the heat to low, cover, and let simmer for 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more water if necessary.

    Season with salt to taste. Serve hot as a side dish or main course.
