    Prepare the Brisket

    Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor. Rub the BBQ rub evenly over the brisket.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and add wood chips for smoke flavor. Smoke for about 6 hours or until the internal temperature reaches 195°F (90°C).

    Cube and Sauce

    Remove the brisket from the smoker and let it rest for about 30 minutes. Cut the brisket into 1-inch cubes and place them in a disposable aluminum pan. Pour BBQ sauce and apple juice over the cubes and mix well.

    Final Smoke

    Return the pan of cubed brisket to the smoker and smoke for an additional 1-2 hours at 250°F (121°C), until the burnt ends are caramelized and tender.

    Serve

    Remove the burnt ends from the smoker, let them cool slightly, and serve with extra BBQ sauce on the side.
