Housemade Sweet Tea (makes ~4 cups; reserve remaining for other cocktails)

Method

Housemade Sweet Tea

    Brew

    Bring 4 cups of water to a boil. Remove from heat and add 4 black tea bags. Steep for 5–7 minutes depending on desired strength.

    Sweeten

    While the tea is still hot, stir in 3/4 cup granulated sugar until completely dissolved. Taste and add up to 1–2 tablespoons more sugar if you prefer sweeter tea.

    Finish and cool

    Remove tea bags (or strain loose leaf). Stir in 1 tablespoon fresh lemon juice if using. Let the tea cool to room temperature, then refrigerate until cold (at least 30 minutes). This yields about 4 cups of sweet tea.

Cocktail Build

    Prepare glass

    Fill a tall Collins or highball glass with ice (about 3/4 full).

    Shake base

    In a cocktail shaker filled with ice, combine 2 oz Tito's Vodka, 1 oz peach purée (or nectar), 0.5 oz fresh lemon juice, and 0.25 oz simple syrup if you want extra sweetness. Shake vigorously for 10–12 seconds to chill and integrate the peach purée.

    Combine with tea

    Strain the shaken mixture into the prepared glass over ice. Top with 4 oz chilled housemade sweet tea and then gently float 1 oz dry Chardonnay on top by pouring slowly over the back of a spoon to create a layered effect (optional).

    Garnish and serve

    Garnish with a fresh peach slice or lemon wheel and a sprig of mint if desired. Serve with a straw and a stirrer so the drink can be mixed before drinking.

    Notes

    If using store-bought sweet tea, use 4 oz to keep balance. For a lighter approach, reduce vodka to 1.5 oz or Chardonnay to 0.5 oz. Adjust simple syrup depending on sweetness of your tea and peach purée.
