Prepare shaker
Add ice to a cocktail shaker until roughly 3/4 full (about 1 cup).

Combine ingredients
Pour 2 oz Bombay Sapphire gin, 0.75 oz fresh lime juice, 0.5 oz agave syrup and 0.5 oz grapefruit shrub into the shaker. Add 2 dashes Angostura bitters.

Dry shake (optional)
If you prefer a slightly silkier texture and more aromatic lift from the bitters, seal the shaker and shake vigorously without ice for 8–10 seconds.

Shake with ice
Add ice (if you didn't already) and shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted.

Strain
Double-strain (using a Hawthorne strainer and a fine mesh strainer) into a chilled coupe or Nick & Nora glass. Alternatively, strain over a large ice cube in an old-fashioned glass for a more relaxed serve.

Express the oils of a grapefruit twist over the drink by holding the twist over the glass and giving it a quick squeeze, then rub the peel around the rim and drop it into the drink (or lay a wheel on the rim).

Optional flamed peel
For an aromatic finishing touch, hold the peel skin-side toward a lit match or torch, squeeze so a thin spray of oils passes through the flame, and quickly rub the rim with the peel before dropping it in. Exercise caution when flaming.
