Prep lobster tails
Using kitchen shears, cut down the top shell of each lobster tail lengthwise to the tip, leaving the tail fan intact. Gently lift the meat from the shell, keeping the base attached, and rest the meat on top of the shell (butterflied). Pat dry with paper towels.

Season and stuff with crab
Combine jumbo lump crab meat with 2 tablespoons of the melted butter and 1 tablespoon lemon juice. Season lightly with a pinch of salt and pepper. Place about 2 to 3 tablespoons of the crab mixture on each lobster tail meat, pressing gently to adhere. Reserve remaining crab to serve if desired.

Brush the exposed lobster meat lightly with remaining melted butter and set on a tray. Chill in the refrigerator for 15 minutes while you prepare coating and oil. Chilling helps the coating adhere.

In a shallow bowl or plate, whisk together flour, cornstarch, smoked paprika, garlic powder, onion powder, brown sugar, sea salt, black pepper, and cayenne. This is the dry house seasoning used to coat the lobster-crab wings.

Remove lobster tails from the refrigerator. Dredge each prepared lobster-crab assembly in the dry mix, pressing gently so a light even coating adheres to the exposed meat and crab topping. Shake off excess. Place coated tails on a wire rack to rest 5 minutes (helps form a light crust).
Buttermilk Marinade & Frying

Heat oil in a deep skillet or fryer to 350°F (175°C). If you don't have a thermometer, heat until a small piece of bread browns in ~45–60 seconds.

Optional shallow dip: For a slightly thicker crust, quickly dip the dry-coated tails into the buttermilk mixture (buttermilk, hot sauce, kosher salt) and then re-dredge in the dry mix once before frying. This step is optional — it increases tang and adhesion.

Fry the lobster-crab wings in batches: carefully lower 2 tails at a time into the hot oil, meat-side down first. Fry 2–3 minutes per side until coating is golden and internal lobster meat registers 135–140°F (57–60°C) and crab is heated through. Total fry time will depend on tail size — do not overcook. Use a slotted spoon or tongs to transfer to a paper towel-lined tray.

If you prefer oven finish: after frying 1–2 minutes per side to set the crust, transfer to a 400°F (200°C) oven for 4–6 minutes to finish cooking evenly.

Immediately brush the cooked tails with remaining melted butter mixed with 1 tablespoon lemon juice for shine and added flavor.
Spicy Buttermilk Ranch

While tails are frying, make the spicy buttermilk ranch: whisk together mayonnaise, buttermilk, sour cream, minced garlic, chives, parsley, cayenne, smoked paprika, lemon juice, salt, and black pepper until smooth. Taste and adjust heat or acidity. Chill until ready to serve.
Finishing & Garnish

Plate the lobster crab wings on a serving board or plates. Garnish with celery leaves scattered over and around the tails to add a fresh anise-like crunch. Add microgreens or parsley if using.

Serve immediately with spicy buttermilk ranch in a small bowl, lemon wedges on the side, and extra house seasoning available for sprinkling to taste.
