Prepare English muffin or roll

Split the English muffin or sandwich roll and lightly toast it. Heat a skillet or toaster; spread 1 tsp butter (or use the butter listed in make-ahead) on cut sides and toast until golden-brown. Set toasted halves aside on a plate, cut sides up.

Cook bacon and ham

If bacon is not already cooked, heat a skillet over medium heat and add 1 tsp neutral oil. Lay 2 strips of bacon in the pan and cook 3–5 minutes per side until crisp to your liking. Transfer bacon to a paper towel-lined plate. In the same pan, quickly sear the ham/Canadian bacon slice 30–60 seconds per side until warmed and lightly browned. Keep warm.

Make folded omelet/egg patty

Crack 2 eggs into a small bowl. Add 2 tablespoons whole milk, 1/4 tsp salt, and 1/8 tsp black pepper. Whisk thoroughly until uniform and slightly frothy. Heat a nonstick skillet over medium-low and add 1 tsp unsalted butter. Once butter is melted and foam subsides, pour the egg mixture into the skillet. Let eggs set around the edges for 10–15 seconds, then gently push the edges toward the center with a spatula while tilting the pan so uncooked egg runs to the edges (folding technique). Continue until eggs are mostly set but still slightly creamy — about 45–75 seconds total. Fold the cooked egg into a neat round or rectangle roughly the size of the muffin and transfer to a plate.

Assemble sandwich

Place the bottom half of the toasted muffin on a work surface. Add the warmed ham slice, then the two bacon strips (broken if necessary to fit). Put the folded egg on top of the meat. Lay 1 slice of cheese over the hot egg so it melts slightly. If using tomato slices or greens, add them on top of or under the cheese as desired. Close with the top half of the muffin.

Finish and serve

Press down slightly to compact. If you prefer the cheese more melted, return the assembled sandwich to the skillet over very low heat, cover, and warm 30–60 seconds until cheese softens. Serve immediately with optional hot sauce on the side or drizzled inside.

Make-ahead (optional)

Cook extra bacon (4 strips) ahead of time and store refrigerated up to 3 days. Keep butter for toasting on hand. When reheating prepped components, re-toast muffin halves in a toaster oven or skillet with 1 tsp butter until golden, reheat bacon and ham briefly in a microwave or skillet, and follow the egg-making and assembly steps above for a quick morning sandwich.
