Use a thermometer
Always cook poultry, seafood, shellfish, and eggs to the recommended internal temperatures. Use an instant-read or probe thermometer and insert into the thickest part without touching bone. Target temperatures: poultry (chicken, turkey) 165°F (74°C); ground poultry 165°F (74°C); fish 145°F (63°C); shellfish until flesh is opaque and cooked through; eggs until yolk and white are firm or dishes reach 160°F (71°C).

Avoid cross-contamination
Keep raw items separate from ready-to-eat foods. Use a designated clean cutting board and utensils for raw poultry/seafood/eggs. Wash hands, cutting boards, utensils, and surfaces with soap and water immediately after contact with raw items.

Sanitize surfaces
After washing with soap and water, sanitize surfaces and cutting boards with a bleach solution (1 tablespoon bleach per 1 quart water) or a commercial sanitizer. Allow to air dry or follow product instructions.
