Method

Spiced Simple Syrup

    Combine

    In a small saucepan, combine 3 oz granulated sugar and 3 oz water. Add the cinnamon stick, cloves, allspice berries and smashed ginger.

    Heat

    Bring mixture to a gentle simmer over medium-low heat, stirring until the sugar dissolves. Simmer gently for 5 minutes to extract spice flavors; do not boil vigorously.

    Rest and strain

    Remove from heat and let the syrup steep for 15 minutes off the heat for deeper flavor. Strain through a fine mesh sieve into a heatproof container, pressing on solids to extract liquid. Cool to room temperature before using. Refrigerate in a sealed container for up to 2 weeks.

Cocktail Assembly

    Prepare shaker

    Add 1 cup of ice to a cocktail shaker (or mixing tin).

    Combine ingredients

    To the shaker, add 2 oz spiced rum, 3 oz apple cider, 1 oz smooth unsweetened apple sauce, 0.5 oz fresh lemon juice, 0.5 oz spiced simple syrup, and 2 dashes of Angostura bitters.

    Dry shake

    Seal the shaker and shake vigorously without ice for 10 seconds to help emulsify the apple sauce into the liquid and build a slight froth.

    Wet shake

    Add ice (if not already added) or add an additional handful of ice to the shaker and shake hard for 12–15 seconds until the outside of the shaker is cold and frosty.

    Double strain

    Fine-strain the cocktail into a chilled coupe or rocks glass (over fresh ice if preferred) using a Hawthorne and fine mesh strainer to remove any apple solids for a smooth texture.

    Garnish and finish

    Float a thin apple slice on the surface and lightly dust with a pinch of ground cinnamon. Serve immediately.
