In a large bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, salt, and black pepper. Add the chicken thighs, ensuring they are well-coated. Cover and refrigerate for at least 1 hour or overnight for more flavor.

Marinate the Chicken

Rinse the uncooked rice under cold water until the water runs clear. Combine the rice and coconut milk in a pot, add 2 cups of water, a pinch of salt, and bring to a boil. Reduce the heat to low, cover, and simmer for 18-20 minutes or until rice is cooked and fluffy.

Cook the Rice

Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken thighs for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).

Grill the Chicken

Slice the grilled chicken and serve it over a bed of coconut rice. Garnish with chopped green onions and a squeeze of lime juice for an extra touch of flavor.

In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
