Prepare the Ingredients
Dice the ham, red bell pepper, and caramelized onions. Grate the pepper jack cheese.

Cook the Omelette
In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and let it cook for 1-2 minutes until the edges start to set.

Add Fillings
Sprinkle the diced ham, red bell pepper, caramelized onions, and shredded pepper jack cheese over half of the omelette. Allow it to cook for another 2-3 minutes until the cheese melts and the eggs are fully cooked.

Carefully fold the omelette in half and slide it onto a plate. Serve hot.

Prepare the Potatoes
Dice the potatoes into small cubes. Rinse under cold water and pat dry.
