    Dice the ham, red bell pepper, and caramelized onions. Grate the pepper jack cheese.

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and let it cook for 1-2 minutes until the edges start to set.
