Preparation of Meat

    Cook the Pork

    In a large pot, combine the pork shoulder and pork liver with 4 cups of water. Bring to a boil over medium heat.

    Simmer

    Reduce the heat and let it simmer for about 2 hours until the meat is tender.

    Shred the Meat

    Once cooked, remove the meat from the pot and let it cool slightly. Shred the pork shoulder and liver into small pieces.

Making Scrapple

    Combine Ingredients

    In the same pot, add the shredded meat back into the cooking liquid. Stir in the cornmeal, salt, black pepper, thyme, and sage.

    Cook the Mixture

    Cook over medium heat, stirring constantly, until the mixture thickens (about 10-15 minutes).

    Transfer to a Mold

    Pour the mixture into a loaf pan or mold. Smooth the top and let it cool to room temperature.

    Chill

    Once cooled, cover and refrigerate for at least 4 hours or until firm.

Serving

    Slice and Fry

    Once chilled, remove the scrapple from the mold and slice into thick pieces. In a skillet, heat some oil over medium heat and fry the slices until golden brown on both sides.

    Serve hot with maple syrup or hot sauce on the side, if desired.
