Prepare the Meatloaf

Mix the Ingredients
In a large mixing bowl, combine the ground beef, breadcrumbs, one egg, diced onion, minced garlic, Worcestershire sauce, salt, and black pepper. Mix until well combined.

Form the Meatloaf
Shape the mixture into a loaf shape and place it in a baking dish. Preheat the oven to 350°F (175°C).

Bake the Meatloaf
Bake the meatloaf in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (70°C). Remove from the oven and let it cool before cutting into cubes for the hash.
Prepare the Hash

Cook the Potatoes
In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and season with salt and black pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden and tender.

Add Meatloaf
Stir in the cubed meatloaf and cook for another 5-7 minutes until everything is heated through.

Cook the Eggs
In a separate non-stick skillet, crack the eggs and cook them to your desired doneness (sunny-side-up, over-easy, etc.).

Serve
Once the hash is ready, serve it on plates and top each serving with a cooked egg and sprinkle with sliced scallions.
